The Canon EOS 40D is a 10.1-megapixel semi-professional digital single-lens reflex camera. It was initially announced on August 20, 2007 and was released at the end of that month. It is the successor of the Canon EOS 30D, and is succeeded by the EOS 50D. It can accept EF and EF-S lenses. Like its predecessor, it uses an APS-C sized image sensor, resulting in a 1.6x field of view crop factor.
Improvements
Changes over the 30D include a higher-resolution sensor (10.1 megapixel instead of 8.2). The sensor also has better noise control than previous models. The 40D has a larger memory buffer so more pictures can be written at a faster pace. Frames per second has been increased from 5 to 6.5.
The 40D adds a new format, Canon's sRAW, which is a smaller RAW image for smaller prints and reduced file sizes. The 40D's RAW format is 14-bit instead of the 12-bit of the 30D..
The camera uses the new DiG!C III image processor, which was first used in the Canon EOS-1D Mark III, introduced earlier that year. Canon DiG!C III processor delivers responsive operation, improved color rendering and near-instant start-up time. A new sensor cleaning system has been introduced. It can also use the Canon Wireless File Transmitter WFT-E3/E3A.
The 40D has a larger screen (3", of the same resolution) than the 30D (2.5") and 20D (1.8"). There is also a new menu for external and internal flash control, including second curtain sync.
Other additions on the Canon 40D include interchangeable focusing screens, a much-needed AF-ON button, the EOS Integrated Cleaning System for sensor dust reduction, and three new optional accessories: an IS version of the 18-55mm kit lens; a new backward-compatible, live view mode, and a weather-sealed battery grip.

The 40D has many similar characteristics to its predecessors the 20D and 30D. This includes various shooting modes, ability to change ISO and white balance, a pop-up flash unit, and an LCD screen. The LCD screen is larger than the previous models (3.0" from 2.5" previously).
The 40D has more megapixels, and the resolution sizes are slightly higher than the 20D and 30D. Its RAW format is 14-bit.
A new feature is Live View, which allows photographers to use the LCD screen as the viewfinder. The shutter noise is quieter in this mode.

CCD or charge-coupled device is the type of image sensor that the cameras uses to "see" the image you are taking. It is what grabs the image you are seeing on your screen or through the viewfinder of your camera. The other type of image sensor is CMOS, or complementary metal–oxide–semiconductor. Their performance are about the same.

I don't know what S/M stands for, but I believe that is Manual mode. In other words, you control the shutter speed. 16 - 1/1000 seconds just means the selection range of shutter speeds you can set the camera to. For example, you can set the shutter speed to 16 seconds, 10 seconds, ..., 1/100 seconds, or 1/1000 seconds, depending on how the camera spaces the shutter speeds. In auto mode, the shutter speeds will only be between 1/8 - 1/1250, meaning that is the range the camera will use for auto-mode (you don't control the shutter speed).

Focus Controls:
First, you get the camera to focus by pushing the shutter button halfway. The camera will either focus lock or continual focus.
Single - the camera will focus on the subject once only, and this is focus lock. For example, if you have the camera focus(hold the shutter button halfway continually) on a person, then you move the camera, the camera will not refocus again.
Continuous - the camera will continually focus on the subject, and this would be continual focus. For example if you have the camera focus on a person, and the person moves, the camera will refocus itself on the person.

ISO Sensitivity:
How much the light sensor in your camera sucks in.
Higher ISO - brighter pictures but you get grainy and "noisy" pictures(loss of quality)
Lower ISO - darker pictures but you get high quality pictures
For example ISO 100 gives you the highest quality pictures. ISO 3200 will give you worst quality pictures, but this setting will allow you to take pictures in lower light areas.
Stick to the lower ISO as much as you can. Sometimes a higher ISO will be needed to brighten pictures for low light photography.

Compensation or Exposure:
Higher EV just means higher exposure to light. Lower EV means lower exposure to light.
Higher EV gives brighter pictures. Lower EV means darker pictures.
For example, +2.0 EV gives you the highest exposure. -2.0 EV gives you the lowest exposure.
Similar to ISO in a way, but when you set EV, the camera will automatically adjust the settings for you such as shutter speed. You don't get control of the shutter speed if you can control EV, vice versa. ISO is independent of itself.

Bracketing:
Takes 3 pictures at once, each with different exposures.
For example the camera will take 3 pictures, one with -1/3 EV, 0 EV, and 1/3 EV settings.
So if you take a picture, the camera will take 3 at once. You would hear the camera take 3 pictures when you push the shutter button all the way down.

Flash Range
How far the flash can go. When your camera shoots flash, it will only go 5.4 meters when you shoot without zoom, such as shooting a mountain scenery or landscape. This is the "wide" that the specifications are talking about.
3.9 meters is if you shoot zoomed all the way in. such as the head of a flower.
