Does the camera have Firewire? This would be your best option.

Pinnacle Systems (recently acquired by Avid) has a product called "Studio 500-USB Version 10.5" and "Studio Plus 700-USB Version 10.5." Both will adapt your S-Video camera to USB. They both come with the Pinnacle Studio software which is incredible for the money. I've been using it since Studio 8.

Using Studio will take care of your other two questions.
